Cryovaccing

an air tight plastic seal around the meat so that freezer-burn is a thing of the past. All steaks are cryovacced however it is impossible to cryovac everything, We at Crystal Bay guarantee everything for at least 3 months.

Portion Control

Portion control is simply having each piece of product cut to exact specifications so that each serving is the same ounce weight as the next. Although, since beef is cut by hand and all beef is slightly different, one steak may be wider and thinner than another that is thinner and thicker, but both steaks are the same ounce weight.

Flash Frozen

Frozen or Fresh that is the question. Let us explain. Fresh is great as long as one really knows how "fresh" the product is. That is an incredibly tough thing to know as supermarkets do not throw out all of their "fresh" fish at the end of every day. Flash Frozen is the REAL solution to this problem. As soon as the product is portion controlled cut and is cryovacced, the product is then rushed to the blast or flash freezer. This freezer is a whirlwind of cold that actually freezes the product within minutes, not hours like your home freezer, this process is so fast that it seals in all the juices instantly. When the product is thawed, the product is like new without any loss of time making our products literally FRESH FROZEN!

Thawing

We suggest to thaw beef or chicken cutlets:

1. Placing your item in the refrigerator 24 hours in advance of cooking is always the best.
2. Item that has the cryovac seal intact, fill your sink with regular warm/slightly cooled tap water then submerse the item. Within minutes, (5-!5 minutes), depending on the thickness of the item, they will thaw.

Seafood Thawing

Shrimp if just boiling does not need thawed, cook from frozen unless recipe calls for different. Scallops thaw well in milk, it retains moisture and flavor. The cryovacced fish can be thawed using the above instructions.
